Enjoying Summer | words from Kate
Summertime is here! Yahoo! It was a little late this year though the last few days are surely making up for it. Like many of you, I love summer. However, I have noticed over the past few years is that summertime has become a balance of overwhelm and enjoyment. There are so many wonderful things to do, people to see, experiences to be had. With the longer days it seems easy (until it’s not) to fit it all in. For me, the first two weeks that school was out seemed like a race of guilt (working and not being home to play), logistics (what’s happening when and who is going where) and overwhelm (all of it). I am glad to say that, with some help from Tapping In Joy, we are on the other side of the transition and things are a little bit easier.
I am learning that what I really want from summer is time to enjoy my family and friends and to be present and in the now (spelled backwards is won!) with what is happening. If this means not partaking in all the wonderful things that summer has to offer, that is ok because I am partaking in the wonderfulness of the people I love.

Kate's Kitchen | Farmers Market Salad
Eating the produce that arrives with the growing season is one way to connect with the now! Plus, fresh fruits and vegetables are packed with nutrients that are more readily available. If you see something at the next Farmers Market that looks delicious, add it!
SALAD INGREDIENTS:
3 cups of arugula
1/2 cup sugar snap peas, chopped
1/2 cup cherries (pitted & cut in half)
1/3 cup of roasted & salted pistachios
1/3 cup of goat cheese. Crumbled
DRESSING INGREDIENTS
2 tablespoons of lemon juice
2 tablespoons of balsamic vinegar
2 tablespoons of honey or maple syrup
1/4 cup of olive oil
1/4 teaspoon of salt
Combine in a jar with a lid and shake till combined
DIRECTIONS
Combine all the above in a large serving bowl and gently toss in the dressing till greens lightly coated. You may have dressing left over. In-joy!
